PIKO Mexican Grill Puts a Fresh Twist on Tradition

Created to bring people together over great food and good times, PIKO is the vision of owner Kasandra Galindo, who wanted every customer to leave “happy, full and having had a great time.” After purchasing the space during the pandemic and working tirelessly to bring her dream to life, Kasandra finally opened PIKO’s doors three years later.

The name “PIKO” comes from pico de gallo, the classic fresh salsa, with a unique twist — the “K” represents Kasandra herself. Since officially opening in November 2024, PIKO has been offering a fun and modern take on traditional Mexican cuisine. As Kasandra puts it, PIKO is “Mexican with a twist.”

Kasandra isn’t new to the restaurant world. Growing up, she helped her parents run their popular Salt Lake City business, Victor’s Tire & Restaurant. She fondly remembers working as a cashier at 14 and learning the ins and outs of entrepreneurship. Inspired by her family’s hard work, Kasandra pursued a master’s degree in business at the University of Utah and eventually launched PIKO.

PIKO’s menu brings a fresh and creative spin to traditional Mexican flavors while keeping family favorites at the center of it all. One standout dish? Their handmade tamales, which sell fast! Kasandra shared, “I knew I wanted to include my mom’s tamales because they hold such a special place in my heart. Growing up, I watched her start selling them, and they truly taste like home.” With vegetarian, vegan and seasonal menu options — plus a selection of alcoholic beverages — there’s something for everyone at PIKO.

Since joining the Salt Lake Chamber, PIKO has celebrated an incredible ribbon-cutting event and gained valuable support. “Meeting the President’s Ambassadors and networking at various events has been amazing. It’s really helped me get the connections I need,” Kasandra shared.
